Ingredients -
- 1 pound of Tomatillos with husks removed
- 1 to 2 Serrano Chiles, finely minced
- 2 cups of water
- 1 teaspoon or so of salt
- 1 clove garlic finely minced
- 1/2 cup of white onion, finely chopped
- 1 half teaspoon ground cumin
- 1 tablespoon fresh oregano, chopped
- 1 1/2 tablespoons frish cilantro, finely chopped
Preparation:
Remove husks from tomatillos and wash thoroughly. In a medium saucepan add the tomatillos, chiles, garlic and chopped onions. Sprinkle in the cumin, oregano and add the cilantro. Pour in the water and bring to a boil. Let simmer about 15 minutes until tomatillos are quite soft. Pour everything into a blender and blend until smooth. You may have to blend one half at a time depending on size of blender. Refrigerate about an hour for best results or just have it at warm.
