Ingredients -
- 1 lb boneless, skinless chicken breast, cubed
- 10 small flour tortillas
- 1 large tomato, diced
- 1 cup shredded lettuce
- 1 cup shredded mexican cheese
- 1/4 cup salsa roja or salsa verde (hot sauce if you prefer)
- 1 lime
- 2 garlic cloves, finely minced
- 2 scallions, chopped
- 1 teaspoon sugar
- 1 teaspoon oregano
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 4 tablespoons of red wine vinegar
Preparation:
Cook chicken thoroughly over high heat until chicken is completely cooked through and browned. Add in the juice of one lime, sugar, salt and pepper, scallions, garlic, oregano and the sugar. Let this mixture simmer about 7 to 8 minutes.
In a flat pan, heat each tortilla about 30 seconds each over medium heat. Add lime chicken mixture to tortilla (shaping like a taco), then top with lettuce, cheese and salsa (or hot sauce).
