Ingredients -
- 6 Medium sized flour toritllas
- 1 tablespoon olive oil
- 1 package shredded Mexican cheese
- Optional ingredient - grilled chicken breast
- Optional topping - shredded lettuce
- Optional topping - sour cream
Preparation:
Heat a large skillet and coat with the olive oil. Drop on a tortilla and let heat on one side until air pockets begin to form. Flip tortilla and add cheese to one half of tortilla. Add optional chicken breast (or even green onions, ripe black olives, anthing you might think will work). Flip other half of quesadilla over and let cheese melt. Top with optional toppings. Don't forget the hot sauce for salsa.
Layout each tortilla on a large (clean but greased) skillet and add some of the chicken mixture to only half of the tortilla. Sprinkle some of the cheese on this and flip the other half of the tortilla over top. Let the cheese melt thouroughly and prepare the next quesadilla.
