Ingredients -
- 1 pd boneless, skinless chicken breast, diced
- 1 packet fajita seasoning mix
- 2 chopped green bell peppers
- 2 chopped red bell peppers
- 1 cup white onion, chopped
- 10 medium size flour tortillas
- 1 large package shredded Mexican cheese
- 1 tablespoon vegetable oil
Preparation:
In a large skillet over medium heat, add the chicken in with the fajita seasoning and brown the chicken until all the chicken is cooked thoroughly. In a medium sauce pan, saute the peppers and onions in the vegetable oil until vegetables have softened. Add in the chicken mixture and stir everything together.
Layout each tortilla on a large (clean but greased) skillet and add some of the chicken mixture to only half of the tortilla. Sprinkle some of the cheese on this and flip the other half of the tortilla over top. Let the cheese melt thouroughly and prepare the next quesadilla.
