Ingredients -
- 4 large flour tortillas
- 8 to 10 ounces cooked chicken breast diced
- 1 small white onion, diced
- 1 cup of tomatoes, diced
- 1 cup shredded mexican cheese
- 1/4 cup cilantro, finely chopped
- 1 can of black beans drained
- 1 cup of cooked white rice
- 1 garlic clove minced
- 1 tablespoon vegetable or olive oil
Preparation:
In a medium saucepan, saute onion and garlic until onions begin to turn translucent. Add in the chicken, black beans,tomatoes and rice and stir everything together. Set aside.
Heat tortillas on a flat pan about 30 seconds each side to soften. Add a large dollop of chicken mixture to the middle of tortilla and roll, while tucking in the ends to seal. Place in oven in a large glass baking dish coated with butter or pam, so burritos don't stick. Sprinkle remaining cheese on top of burritos. Cook at 400 degrees for about 8 to 10 minutes until cheese is nicely melted.
