Beef and Bean Burrito

Ingredients -

  • 6 to 8 medium size flour tortillas
  • 1 package ground beef (lean), about a pound
  • 1 can Rosarita refried beans, 16 ounce size
  • 1 can Enchilada sauce
  • 1 medium white onion, chopped
  • 1 finely minced garlic clove
  • 2 teaspoons chili powder
  • 1 teaspoon oregano, dried and crumbled
  • 1/2 teaspoon cumin
  • salt and pepper to taste
  • 1 cup shredded lettuce

Preparation:

Brown the meat, onion and garlic over medium heat, making sure the meat is browned and cook through. Use a wooden spoon to break up the mixture into small pieces while cooking. Add in the oregano, cumin and salt and pepper and let simmer about 10 to 15 minutes. Stir in the refried beans and 1/2 of the enchilada sauce (save the other half for later).

Heat tortillas on a flat pan for about 30 seconds on each side to soften. Add a large dollop of the meat and bean mixture into the middle of each tortilla and roll, while tucking in sides to make a good seal. Place burrito on a plate adn drizzle some of the remaining enchilada sauce. Top with shredded lettuce (also diced tomatoes, sour cream, guacamole, shredded mexican cheese or whatever suits your needs!).
