Mexican cuisine is not just popular in the United States, but has become a worldwide phenomenon. However I think people limit their views of what they think of Authtentic Mexican Recipes and only think of a few popular items like tacos, burritos, enchiladas, salsas and guacamole. The truth is that Mexican cuisine is an incredibly diverse collection of both indigenous ingredients as well as European influences with just a hint of Tex-Mex thrown in. But it wasn't always that way.
Before the Spaniards and the French took their time occupying Mexico, most of Mexican cuisine had sprung up from locally grown ingredients as well as some domesticated livestock like turkey and of course local fish.
The biggest pre-European ingredients in the Mexican diet were beans, chilies and of course corn. Corn was the staple of most the diet, making such foods as corn tortillas and tamales, which today are still a big part of Mexican cuisine.
The Spanish introduced garlic, rice, chicken, beef, onions and other vegetables. The French had more of an influence on introducing breads, soups and desserts to the diet than introducing new ingredients. Today's Authetnic Mexican Recipes is a compilation of all these ingredients, blending the old with the new, indigenous with European influences.
Like any large country, many dishes are popular only in specific regions of Mexico, with spicy vegetarian and chicken dishes being popular in the South of Mexico and beef dishes being popular in the North. Different fish dishes are more relevant along the coast where certain types of fish are found. Mexico has both a coast along the Atlantic Ocean and Pacific Ocean as well as the Gulf of Mexico and Baja California, each with unique fish dishes to be found.
